    Chocolate Coffee Pudding Pops! If you were a kid in the 1980s you probably remember the infamous Jell-O Pudding Pops. Now you can enjoy the delicious taste of Jell-O pudding, with the added bonus of COFFEE, in one refreshing frozen treat - on a stick!

    The best part about these pops is that they are incredibly easy to re-create at home. Instant Chocolate Pudding is used as the base in this recipe, and then coffee and chocolate chips are added to create an extra special flavor combination that's slightly more grown up from the original recipe.

    Instructions

    1 4-ounce package Instant Chocolate Pudding
    2 cups Milk
    1 teaspoon Pure Vanilla Extract
    1/4 cup Cold Coffee
    1/2 cup Mini Chocolate Chips
    About 15-20 Mini Condiment Cups
    About 10 Lollipop Sticks, Cut in half

    Directions

    In the bowl of a stand mixer, whisk together the instant chocolate pudding powder and the milk. Increase the speed to high and whisk until the mixture thickens, about 3-5 minutes. Stir in the vanilla and coffee.
    Place the condiment cups on a flat plate that will fit in your freezer. Place a few chocolate chips in the bottom of each cup (to cover the complete bottom of the cup). Divide the chocolate pudding mixture between the cups, filling all the way to top. Carefully stick one lollipop into the center of each cup. Transfer the plate to the freezer to allow the pudding pops to chill and harden completely, about 5-6 hours.

    If you have trouble getting the sticks to stand straight you can either place the pops in the freezer for an hour or so without the sticks, then add at that time. The other option is to lie a piece of wax paper that drapes evenly over all the cups and press your sticks through that way - the wax paper will help keep the sticks standing straight.

    Once hardened and ready to serve, remove the pops from the freezer and serve immediately. You will need to remove the pops from the cups before eating. You can peel a paper cup away or lightly run your mold under warm water for a few seconds to make removal easy.

    These last up to 2 weeks in the freezer.
